This course presents the basic biochemistry of vitamins, minerals, accessory nutrients and their interactions on human cellular metabolism. The course includes a review of micronutrients from a historical perspective; the dietary recommended intakes as stated by government and health organizations; food sources of micronutrients; nutrient functions with respect to human physiological functions; signs and symptoms of deficiencies and toxicities; knowledge of dosages for absorbable forms of each nutrient; as well as current evidence on nutrient interactions.
